Lemon Cheesecake with Italian Meringue

I love cooking!! Especially desserts...:-)
Ingredients:
Cookie Base
1 1/4 cups (160gr) digestive biscuit crumbs
1/3 cup (90gr) melted butter
Topping
250 gr softened cream cheese
1/2 cup (100gr) sugar
5 tablespoons lemon curd
3 tablespoons cornstarch
1 large egg
Meringue
3 egg whites
3 tbsps white fine sugar
a few drops of lemon juice
Preparation:
Mix the biscuit crumbs with the butter until they become a well blended mixture. Put the mixture into a round tart dish and press it to form an even layer.
Beat the cream cheese with the sugar until they become smooth. Add the lemon curd, the cornstarch and the egg and beat them all together.
Add the topping over the cookie base.
Bake for 25-30 minutes in preheated oven to 190 C.
Cool  a little and prepare the meringue. Beat the egg whites, adding the sugar partially and the lemon juice, until fluffy. Careful not to beat it a lot cause it will become like soap.


Enjoy them with a cup of green tea or an aromatic blended coffee in the afternoon.
