Vegetable Paella

Here I am again with a delicious spanish dish! :-) You can make paella with anything u want. I prefered different kinds of vegetable.
Ingredients:
1 onion peeled and diced
2 tomatoes diced
1 orange bell pepper diced
1 red bell pepper diced
a few jalapeno peppers diced
pleurotous mushrooms cut into large pieces
a few asparaguses cut
about 2 cups paella rice (i used arborio and turned out just fine)
Preparation:
Heat a large pan with olive oil and a little butter. Add the onion and cook until golden. Then add the peppers and cook for about 4 mins.
Add the mushrooms and cook for 5 more mins.
Then add the rice and cook for 2 mins. Add 4 cups of vegetable broth, turn down the fire to minimum, add the asparaguses and cook until few juices are left in the pan. Do not mix the food in the meantime.
The rice must be a little al dente when u take off the fire.
Enjoy warm with a glass of white wine!
